I am posting a Recipe after a long time.. many of my friends asked me to post recipe of this Veg Pulao, so on popular demand thought to capture the step by step process which will make it easy for you to prepare.
You will need Items (this serves 4)
1. Basmati Rice – 2 Glass (Soak it in water for 30 mins)
2. Cashew – 10 – 15
3. Onion – 1 large (cut to small pieces)
4. Beans – 1 cup (cut to small pieces)
5. Cauliflower – 1 cup (cut to small pieces)
6. Peas – 1/2 cup
7. Carrot – 1 cup
8. Whole Garam Masala –
Pepper (7-8) , Cinnamon ( 1 stick) , Cardamom (3-4) , Cloves (4-5)
9. Ghee – 1 tsp
10. Refine Oil – 2-3 tbsp
11. Salt – As per taste
12. Pepper powder – 1 tsp
13. Cumin Powder – 1 tsp
14. Dough made from Flour
15. Kadai with a lid for cooking
16. Keora Water – 1tsp for flavor
Steps
1. First roast the cashews in little oil and then keep them aside. Keep the flame in ‘low’ to ‘medium’
2. Add some oil and add the whole garam masala and cook for 1 min
3. Add the onions and fry them till they are golden brown
4. Then add the vegetables and fry them for 6-7 mins
5. Then add the Soaked Basmati rice, Salt, Cumin Powder, Pepper Powder and fry for 2-3 mins
6. Add water. Since I have taken 2 glass of rice I added 4 1/2 glass of water. Keep the flame in ‘low’ for rest of the process.
7. Add the ghee, Keora water & Roasted Cashews
8. Take the dough and place it on the rim of the lid to cover the vessel. Press tightly so that it is nicely applied. Then place the lid on the kadei and press tightly so that there are no gaps for the steam to release.
9. The in low flame cook for 25-30 mins. After that switch off the flame but don’t open yet. Keep it like that for another 15 mins.
10. After that open it and serve the Pulao with Raita, it tastes really good with that.
